ALDI-TOF mass spectrometric analysis of food oligomeric polyphenols Flavonoids, which include specific classes of polyphenols and oligomeric polyphenols, have been linked to the health benefits of fruit.  MALDI-TOF mass spectrometry will be used to determine the degree of polymerization of flavonoids in fruit and fruit products including crude samples that will allow fast screening of foods.
